Springtime farmers' markets are full of weird greens that most people don't have a clue what to do with. Salads aren't just about lettuce, you know! But if you aren't into salads I have another yummy idea!
In a pan, cut up onions and a wee bit of garlic. Saute with some olive oil. When the onions start to cook until they are clear, add the greens (this works for most greens: turnip, collards, chard, etc.) Cook them down, adding a bit of balsamic vinegar.
Meanwhile... make some toast and fry an egg over easy (presumably one you got at the farmers' market!) Then slather mayonnaise on the toast, add the greens, and top with an egg. Seriously delicious.
